I made this sauce to go with these burgers. So YUM! It’s slightly sweet from the orange juice and maple syrup with smokiness from the paprika and liquid *smoke.* Might be good on a sandwich with smoked tofu and coleslaw or on a rueben.
This might seem weird to mention, but this sauce does contain mayo. If Veganaise freaks you out, try this recipe from Epicurious.
And yes, I made a substitution.
Well. A teensy substitution. The recipe requires extra firm tofu. I used a silken tofu. No biggie. LOVE this recipe, by the way. It firms up after refrigerating. So far, it’s been in my fridge for two weeks, and it’s still going strong and hasn’t spoiled. Really versatile. And honestly, I love the taste of this homemade mayo more than the store bought brands that I have tried.
Smoky Citrus Sauce
2 Tablespoons tomato paste
2 Tablespoons “mayo” (storebought or homemade, like this one from Epicurious)
4 Tablespoons orange juice (I juiced 2 clementines for this)
1 Tablespoon maple syrup
1 teaspoon soy sauce
1 teaspoon paprika
1/2 teaspoon liquid smoke
1 clove fresh garlic, smashed and diced and chopped
Directions: In a small bowl, combine all ingredients and mix until smooth (for the most part; the obliterated garlic will add some bumps). Microwave for 30 seconds. Stir. And serve with these burgers.
Makes: around a 1/2 cup
