I bartered for pasta yesterday.
Ok, well really… I *tried* to barter for pasta a WEEK ago with a friend. But my prized possessions were less than stellar –
Homemade dryer sheets.
No wait, I just liked the way that sounded. Didn’t really have any lipstick.
… But, she wouldn’t budge.
I’ll just give it to you. I have extra.
A few DAYS ago, I posted an ad to my friends about some give away items that I had around the house.
And, basically I bartered a throw pillow for a few extra boxes of pasta. Complete score.

Alcohol is funny. If you add it to regular food items, people get excited. If you add LIQUOR to something that doesn’t normally include it; now that, my friend, is REALLY exciting. Such fun.
Add some zest to your next meal and incorporate some Vino. Or better yet – forget the bland WineAndTomato combo… which is what I originally wanted to add (but had NONE)…
… and push in some tequila.

Boozy Tomato Pasta
1 teaspoon fennel seeds
1 teaspoon dried thyme leaves
2 teaspoons oil (I used coconut)
1 cup chopped (on a diagonal) green beans
4 cloves (large-ish) fresh garlic, smashed then chopped
8 Tablespoons tomato paste
1 cup water
2 Tablespoons vegan “parmesan cheese”
2 Tablespoons tequila
1/2 teaspoon apple cider vinegar
1 large handful baby spinach leaves, julienned then roughly chopped
1/2 cup raw almonds, roughly chopped
salt and pepper, to taste
1 package linguini, cooked according to package directions (GF or regular!)
Directions: Place a large (DRY) skillet, over medium heat. Add fennel seeds and thyme leaves and cook (shaking occasionally so as not to burn!) until fragrant. Add oil, green beans, and garlic and cook until beans are tender. Add tomato paste and water to pan and stir until smooth. Continue cooking for 5-10 minutes more (to evaporate some of the water and allow the flavors to meld). – MEANWHILE: Bring a large pot of water to a boil (for pasta).
Stir in parmesan cheese, tequila, vinegar, spinach, and almonds into the tomatoed-sauce. Cook 5 minutes more (to burn off the alcohol a bit and allow a little more *melding*). Remove from heat. Season with salt and pepper.
Cook pasta according to package directions. Drain thoroughly. Transfer pasta to a large-ish bowl (or back to the cooled pasta pot). Pour sauce over pasta and mix well. Yum!
Makes: 4-8 servings, depending on how much you’re watching your carb intake.
