Last night, I made this soup – and, although fenugreek and paprika and lemons don’t exactly go together –

Fenugreek and Paprika Spiced Carrot Hummus

1 cup roasted carrots
1/2 cup cooked garbanzo beans (or chickpeas)
1/2 cup water
2 Tablespoons olive oil
1 Tablespoon apple cider vinegar
1 teaspoon fenugreek “seeds”
1 teaspoon smoked paprika
salt and pepper, to taste

Directions: Combine all ingredients in a blender until smooth.  Serve at room temperature.  Makes: around 3/4 cup.
