When we visited Athens, Georgia (USA) this past weekend, I was lucky enough to be near a Trader Joe’s in order to pick up a few items in order to make our “final” weekend meals for October. Including: 2 pounds apples, 1 pound kale, 1 pound baby carrots, one sweet onion, 7 ounces arugula, 4 ounces pea shoots, a 14.5 ounce can garbanzo beans, 2 boxes of cereal, 8 ounces vegan cream cheese, 64 ounces almond milk – my $32 was also used to purchase a package of Tofurkey Italian Sausage. At $2.99 per container, Tofurkey Italian Sausage costs $0.75 per link; more than the price of one onion, two more than the price of one pound of carrots.
So – in order to take full advantage of my purchase, I had to get creative, which – of course – included a few soups. It is October, after all.
But… along with the soups – I also threw in a pasta salad and a BBQ lentil stew, for good measure. Thankfully, one link packs a pretty zesty punch. Enjoy!
